We last checked in with Corkbar co-owner Caleb Wines in September. At that point, he said, ““If all of the construction and permit Gods are in our favor, we could be open in December or January.” The permit Gods were only semi-kind to Wines and partners Garry Muir, Craig Hoffman, Chris Schiffman and John McGonigle. Today he said, “We nearing completion of our buildout and it is really coming together nicely! At this point we are still tracking to a mid- to late-February soft opening. Trying to get all the inspections and approvals is like lining up a bunch of dominoes. If one goes awry, then the rest are affected! We are doing everything we can to make sure we open on time and we have great team to help us get there.”

The Corkbar website is live and explains that not only will Corkbar carry 40 wines by the glass, they’ll also have 12 artisanal beers and market-driven food.
