Corkbar to Open March 5

For Corkbar, Managing Partner Caleb Wines, John McGonigle, Garry Muir, Chris Schiffman and Craig Hoffman teamed up to “re-create the California wine tasting experience.” Beginning Thursday, March 5, expect 100% California wines, including more than 40 wines by the glass. Corkbar will gladly you pour you a flight of five wines, one ounce apiece. You’ll also find a dozen beers, half on tap and mostly from California.

Ana Henton and Gregory Williams of MASS Architecture & Design (Silverlake Wine, Bacaro L.A.) crafted the southeast corner of the EVO building. Wines uses the phrase “wine country chic” to describe MASS’ design, which he considers “rustic and casual, with upscale elements…Our design partner MASS have done an incredible job of weaving a combination of materials into the design that subtly play on elements of the wine country.” Henton’s design incorporated green wine bottles into the architecture and decoratively displays rows of corks, which are stuck in the wall. You’re welcome to sit at the curved wooden bar, sunlit dining area or out on the patio.

Albert Aviles, sous chef at Bar Marmont, consulted on the seasonal, market-driven menu, with every listing featuring suggested wine pairings. Chef du Cuisine Byron Hogan will execute Aviles’ vision. Expect to find SNACKS/SIDES like Bacon Gougeres and a market-driven soup of the week. SALADS are highlighted by a Shredded Duck & Brussels Sprout Salad with candied hazelnuts, blue cheese and frisee, all drizzled with roasted apple and hazelnut oil vinaigrette. Corkbar also offers sandwiches, boards of cheese and charcuterie, and MAINS like Striped Bass with chorizo, corn relish and romesco. 6-Hour Braised Short Ribs is only available after 5 PM and arrives on a bed of cheesy polenta. For dessert, you’ll find chocolates, Banana Bread Pudding and Citrus Shortcake with dark chocolate panna cotta, citrus compote and smoked almond brittle. To see the full menu, CLICK HERE.

Corkbar will be open daily from 11:30 to at least midnight. If there’s action at nearly Staples Center or L.A. LIVE, they can stay open until 2 AM.
