Last week, valued Food GPS contributor Matthew Kaner revealed that Echo Park’s Magic Gas is on the verge of going organic. Today, we learned how East L.A. native Art Bagovsky and wife Zina are redefining the role of a gas station market. The couple has owned Magic Gas/Mart/Cafe since March, and beginning next week, they plan to roll out organic produce, sandwiches, soups, salads and pastries. Yes, they’ll still have gas and house a convenience store, but you’ll also find pay-by-the-pound fruits, vegetables, meat and cheese. Soups will rotate regularly, but don’t be surprised to find cups of potato, mushroom or garlic & pea.

The Bagovskys enlisted a new (unnamed) bakery to produce savory Middle Eastern breads called boereks. They had satisfying test samples of spinach and feta on the counter, and said other options should include broccoli, Swiss, pepper Jack and blue cheese. They’ll also sell torpedo shaped fried breads stuffed with ground beef, potato and cheese. If you’re looking for a caffeine fix, Magic is already brewing LAMILL coffee.

Twin patios flank the Magic Mart, and the outdoor areas will host more than just seating. Art Bagovsky said they plan to tap into the local music scene, hosting life performances from local bands. They’re also hosting an art show next month.
