To end the summer, Karina Shishalovsky and sister Diana opened a casual Cal-Med restaurant called Fresh Cutt Carving Grill in the former Sherman Oaks home The Dressing Room. Father Roman Shishalovsky founded the local Roman’s chain, but his daughters decided to chart their own path. They stuck with Sherman Oaks due to foot traffic and plentiful parking.

The sisters’ close friend Sat Garg of Akar Studios designed the restaurant with assistance from associate Sean Morris. The contemporary space features an orange and lime color scheme, plenty of banquette seating and recycled materials. Colorful vegetable and meat prints line bamboo walls.

Karina, Diana and Roman Shishalovsky took four years to develop all of the recipes. Fresh Cutt features five specialties, including a Cajun Bowl, a BBQ Chopped Salad and a Three Cheese & Tomato Melt, but the Shishalovskys encourage you to “Create Your Own.” Begin by selecting Middle Eastern lavash, Spanish flat bread, Mediterranean pita, a plate or bowl. Pile on lemon chicken breast, pepper tri-tip steak, chicken jambalaya, beef jambalaya or vegetables. Finally, “get dressed” with spreads, hot accompaniments, fresh garden selections, cheeses and the “final touch” (dressing or sauce). Weekend Specials consist of roasted turkey breast (Friday), garlic lamb (Saturday) and BBQ beef brisket (Sunday). No matter the meat, expect 24-hour marinating and slow roasting on the “spin grill” (also known as a rotisserie). Meals top out at $9.95.
