Josef Centeno Resurfaces at Bar Celona

Jack and Karen Huang recently hired Chef Josef Centeno (Lot 1 Café, Opus) to rewrite the menu at Bar Celona in Old Town Pasadena. Centeno has earned acclaim for his innovation in the kitchen. Now he’s applying that vision to Spanish cuisine.

Here’s a selection from Centeno’s new Bar Celona menu:

Tapas/Starters
Blistered padron peppers, Spanish sea salt ($6)
Chef’s daily selection of 3 Spanish cheeses ($15)
Chef’s daily selection of Spanish cured meats ($18)
Spanish flatbread, basil & mint, Manchego, figs ($7)
Albondigas, saffron, allspice ($7)
Paella Castellana: beef, pork, chicken ($20)

DINNER MENU

First
Citrus marinated shrimp, coriander leaf, grilled bread ($12)
Crispy pork belly, Brussels sprouts, fried egg, salbixtada ($14)
Quail stuffed with tart cherries, apricots, chorizo, roasted figs ($15)

Second
Tasmanian ocean trout, lima beans, gooseberries ($22)
Butter poached prawns, kabocha squash puree, green olive-parsley vinaigrette ($25)
12 oz rib-eye steak, patatas bravas, gallego sauce ($25)

Desserts
Crema catalana 
custard with orange essence
 ($7)
Chilled cinnamon rice pudding 
candied pecans, caramel
 ($7)
