At Friday night’s Delux grand opening, Kristofer Keith said his next design project is to transform Charcoal into Circa 19 with restaurateur Adolfo Suaya. Chef Andre Guerrero (Max, The Oinkster) has already crafted a bistro menu. Everything will be served family style, so there won’t be single-person dishes like burgers. Keith referenced pulled pork, pork chops and pork ribs. There will also be about a dozen pizzas. He, Suaya and Guerrero been discussing the idea that no dish will exceed $19.

Charcoal was contemporary, and Keith is taking the opposite tact with the re-design. He’ll have brick walls and columns. He’ll also demolish the west and north walls, making the space open-air, more inviting. Keith predicts a February opening.
