Amelia and Florent Marneau, chef-owners of Marché Moderne at South Coast Plaza, are offering bouillabaisse on Thursday nights all fall. The Provencal seafood stew incorporates fish caught in Toulon and Marseilles on Wednesdays and air-shipped to the restaurant by Thursday morning. The Marneaus’ recipe utilizes rouget, dorade rose, Saint-Pierre (John Dory), congre, rascasse, and pagot with baby fennel, leeks and small potatoes. The seafood selection is variable, depending on the catch. Accompaniments consist of chive aioli, saffron rouille, tomates rôti, preserved lemon, tapenade and croutons. Bouillabaisse costs $48.
Marché Moderne manager Sylvie Cahuzac recommends three wine pairings: French Rosé Domaine Tempier 2007 Rosé ($68), Portuguese Redoma Douro Niepoort, 2007 ($9 a glass), and Abraxas, Robert Sinskey, Los Carneros 2006 ($55).
Marché Moderne is located on the third floor of South Coast Plaza, at The Penthouse, adjacent to Nordstrom.
