At Tequila University on June 23, Ortega 120 co-owner Demi Stevens revealed that she and chef-partner Thomas Ortega are planning to open Paparazzi Pizza seven blocks away in Redondo Beach. Stevens said, “We were messing around with some Mexican pizzas and some guests asked us to do a pizza place.” They were motivated to act on their diners’ wishes. By February 2010, they’ll launch a wood-fired pizzeria using a mix of cherry and maple wood as fuel. They’ll also have baked lasagnas.
