Patina Restaurant Group Chef/Founder Joachim Splichal named Lulu De Rouen Executive Chef at Pinot Provence in mid-September. She’s a Manhattan Beach native who joined the gastro-conglomerate in 2003, working as sous chef at Catal Restaurant and Uva Bar at Downtown Disney.
That’s not all the news related to Pinot Provence. The French restaurant is celebrating its ten-year anniversary. To celebrate, Chef De Rouen will prepare a four-course menu for $48 on November 14, 15 and 16. Here’s the prix fixe menu:
AMUSE: calamari salad
FIRST COURSE: red mullet “escabeche” with crunchy watercress, shaved fennel and picholine olives
SECOND COURSE: grilled loup de mer served with artichoke barigoule
MAIN COURSE: traditional Provençal beef stew (Daube de Boeuf ) served with gnocchi and grilled vegetables
OPTIONAL: cheese course featuring cheese from Provence
DESSERT: roasted black Mission figs served with honey croustade, lemon fromage blanc and house-made hazelnut ice cream
In the Pinot Provence bar, there will also be a “10/10/10” menu of ten bar bites, costing $10 apiece. In the spirit of the celebration, 10/10/10 will be available for 10 days, from November 17-26. The dishes are highlighted by oven-roasted vine-ripe tomatoes stuffed with lamb farçi, inspired by a dish on the restaurant’s original 1998 menu and grilled sardine crostini served with cayenne fennel salad, which is current.
