		<description>Ahhh...Raul. Makes me remember the good old days when he was my favorite guy behind the bar at Smalls K.O. And then loved getting tequila to sip with a shot of Sangrita at El Carmen from him. 
Truly one of the best bartenders.

		<description>As much as I love Eric Alperin as a friend, I would have to disagree with the chef title.  It is much more difficult to put together the flavors of food on a plate than create drinks for a cocktail.  While I think the term mixologist is through-and-through out of vogue at the moment, I see no real need to define what it means to be a bartender.  If you are a bartender at a good spot like The Varnish, then you are doing a wonderful thing by creating good quality cocktails.  You are a bartender.  If you just mix wells and put together highballs in Hollywood, well, you&#039;re a bartender too.  If someone takes their craft seriously, as Julian Cox and Eric Alperin do, then they deserve all respect.  I&#039;m pleased to see that Downtown has become such a wonderful destination for good drinks, and Las Perlas is certainly a highlight. Hope to visit very soon.</description>
