The chicken was awesome. It’s called anticucho, a skewer, flattened and marinated in secret Peruvian marinade. I asked them what’s in the marinade. My waitress said, “I cannot tell you. Not even one ingredient.” I said at least tell me there’s salt. She said, “Okay, there’s salt.”
The ceviche was excellent. Fresh and delicious, made with leche de tigre – tiger milk – a creamy white vinegar sauce. You take the seafood with delicious cilantro sauce and mix it with a cut of yam. Vinegary, salty, sweet, fresh, all in one bite. They have Peruvian corn. They marinade it in butter and salt, give you a couple kernels with the ceviche.
They have 10 different jugos, all made with indigenous fruits of Peru. I couldn’t tell you the name of one of them, but they were all delicious.
