There has always been a disconnect between the barista competitions I’ve experienced in places like Portland, which included some of America’s most talented coffee professionals creating signature beverages that only judges get to enjoy, and what people experience in consumer-facing coffee bars. Luckily, Portola Coffee Lab introduced Theorem inside The OC Mix in 2012, giving baristas a forum to serve sig drinks to the public. Initially, a prix fixe experience was only possible by appointment, and the Duggans, who own Portola, didn’t allow photography. Now, the sidebar experience is far more open, with a monthly menu of signature beverages, including a recent favorite named Everything But The Stick.

The signature beverage, created by baristas Skyler Richter & Tohm Ifergan, was inspired by a collaborative beer by the same name from nearby Noble Ale Works and The Bruery made with a creamsicle in mind. At Theorem, Everything But The Stick is available hot or iced. Cold, expect Portola’s lush Kyoto cold brew lavished with Straus Family Creamery heavy cream, cinnamon, nutmeg, orange-vanilla bean syrup and orange zest served on the rocks with orange peel on the rim. Ifergan, who previously worked for Intelligentsia Coffee in Chicago, prefers the drink cold, and his “Orange Creamsicle Cappuccino” was pretty damn convincing.
