The thin foil wrapper barely hinted at the diabolical sandwich lurking within. All we could see was griddled bread, some melted Cheddar and a couple caramelized onions. It seemed to harmless enough, until we tore open the foil. It was only then that we realized we were ambushed by Dave Danhi.

The chef’s Grilled Cheese Truck has been one of the breakout stars of the L.A. food truck scene. Sure you can get a “plain or simple melt” or a vegetarian “harvest melt,” but Danhi’s triumph is undoubtedly the Cheesy Mac and Rib ($7.50), a buttery grilled cheese sandwich crammed with macaroni and cheese, cascading Cheddar, sweet caramelized onions and a healthy dose of juicy pulled BBQ pork. This is a gut bomb of the highest order, but it’s still worth it.

If you ever need to understand why Danhi has over 13,000 followers on Twitter and just purchased a second truck, just order the Cheesy Mac and Rib. Of course I can’t imagine eating another one for months, but that’s not the point.

    Funny. Next time, a harvest melt is probably a good idea, but I’ll probably just succumb to the Cheesy Mac and Rib again.

    The Brie Melt w Turkey is a good in-between sandwich for gently weening oneself off of the “Fully Loaded” experience. I’m lucky enough to have had all three and admire the tater tots as well. But I have yet to try Fab Hot Dog’s tater tots…. goshhhhh *stilted Napoleon Dynamite sprint*

    I haven’t tried the Brie and turkey yet. I might resort to that next time. I have bad lunchroom associations with tater tots, but they were irresistible at Fab.
