Industry Pop-Up Braised Pork Sandwich

Jamie Woolner and Angel Martinez bring different flavors to Industry for lunch.

Industry Café & Jazz is a rare Eritrean restaurant from chef and jazz musician Aron (Tsenasel) Tadesse in the Culver City Arts District. They started serving a Pop-Up Lunch on March 28. The main man partnered with Jamie “The Walnut” Woolner and Angel “Moonshine” Martinez. Woolner is chef-owner at Pizza of Venice, which “sells boutique pizza to wine bars and coffee shops. He is opening a café in Altadena called P.O.V. Market” and would like to sell his pizza at farmers markets. Martinez “has worked for some of the top restaurants in L.A., including Valentino, Taverna Tony and (currently) Sotto. He specializes in wine and service.” Yes, the back of the menu is revealing.

Industry has a small menu of “Hot” and “Cold” dishes in the colorful café, including salads, pizzas, and salads. Braised Pork Sandwich ($9) is my personal favorite. The juicy meat bathes in a savory sauce – pork jus, lemon juice, rosemary, garlic and olive oil – before resting with arugula in crusty Dolce Forno ciabatta. Crispy slices of house-cured pancetta definitely brought the sodium levels into the red. Considering they’ve only been open a week, and that they typically ply their trade with pizza, I’m hopeful that they’ll find porcine balance.
