Cart For A Cause is a charitable truck that parks for two precious hours each Tuesday, allowing high-profile chefs to help raise money for St. Vincent Meals on Wheels, which feeds an astonishing 4700 homebound Angelenos per day, on average. During my latest visit, Il Grano and La Bottega Marino chef-owner Sal Marino was the truck’s captain, generously donating his time and food, including an always inviting porchetta sandwich.
Porchetta traditionally involves pork belly and loin. Chef Marino wraps pork shoulder with pork belly, which are seasoned with salt, pepper, garlic and finocchio – fennel tops. He shaves off juicy cross-sections and crispy cracklings and slides the slices between soft pizza bread with salsa verde and a fistful of arugula. The $10 charitable meal came with a cookie, bag of pistachios and POM tea.
Marino’s sandwich is available at all 3 locations of La Bottega Marino, and porchetta will soon appear on the brunch menu as a hash with potatoes, onions and Chino Valley Ranchers eggs.

Yum. I got the burrata sandwich when I did Cart For a Cause – also super delicious. It had bacon, I believe.

Esther, I saw that sandwich on the menu. I’m pretty sure it was pancetta.
