Since T Salon owner Miriam Novalle imported her Manhattan tea concept to Melrose in July 2009, she’s made repeated strides. She recently brought Sushi Zuri chef Zuri Lifshitz on board to produce tea-infused sushi. Now she’s teamed with Carmela Ice Cream on three premium tea ice cream flavors.

White Ginger Pomegranate, Sunrise in Tibet and Angora are available exclusively at T Salon and cost $6 for eight-ounce containers. My favorite flavor was Sunrise in Tibet, which involves black tea blended with mandarin and thistle, though Angora also had its charms, a caffeine-free Rooibos tea blended beet root, orange peel, ginger raspberries and raspberry leaves. The freezer is located near the entrance and hosts representative spoonfuls of each tea.

Novalle said that she worked with Carmela’s Jessica Mortarotti and Zachary Cox for a month to develop the best flavors possible, which are all made using a sweet cream base. This collaborative tea ice cream may soon be available at Paramount Studios as well.
